This soup is another great digestive recipe that fills you up. Enjoy it hot or cold!
3 cups frozen peas
1 bunch of basil
2 cups of spinach leaves
1 red chilli finely chopped
black pepper to taste
Add enough water to a pot to cover the peas completely (about 4 cups) and bring to the boil. Add the peas, basil leaves, spinach leaves, chilli and pepper and boil for 10-15 minutes, until the leaves are fragrant and wilted. Be sure not to boil the goodness out of the greens.
Remove from heat and process until smooth using a food processor or hand held mixer. Eat warm or cold.
Preparation time 10 min. Cooking time 15 min. Serves 2.
